As we get ready to enter March my dogs and I officially declare it hiking season! Sometimes we still find snow on the ground and the wind is certainly still whipping but the sun is just strong enough for us to hike all day and enjoy the beauty of New Mexico up close again. One of my favorite snacks to bring with me on the trails are these no-bake peanut butter energy balls! Like most of my recipes I often add whatever I have on hand in addition to what the recipe calls for but these treats are the perfect mix of sweet & salty and just one or two picks your energy right back up to finish off a long trail! They’re best if you make them the night before and they’re ready for you in the morning!

  • 2 cups rolled oats

  • ¼ cup sugar (can skip this depending on what else you’re adding or diet)

  • 2 tablespoons cocoa powder

  • 2 tablespoons chia seeds

  • 2 tablespoons flax seeds

  • 4-5 figs diced into small pieces

  • 1 tablespoon water

  • ½ teaspoon vanilla extract

  • ½ cup butter or ghee (softened)

  • 3-4 tablespoons of nut butter softened (can use peanut butter, almond butter, or any other substitute you like!)

  • 1 cup shredded coconut

I’ve also added things like raisins, cranberries, chopped nuts, spirulina, other dried fruits, or really whatever you have on hand that would taste good in a granola bar will go well in this recipe! You may need to up the amount of nut butter depending on how many other additions you put in.


  1. In a large bowl, combine the oats, sugar, cocoa powder, chia seeds, flax seeds, diced figs, and any other additions of your choice and mix well.

  2. Then mix in the water, vanilla, softened butter or ghee and softened nut butter to form dough.

  3. Wash your hands, and roll the dough into balls that are about 1-2in in diameter. Roll the balls in shredded coconut until covered.

  4. Chill on a baking sheet lined with parchment paper in the fridge for at least 30 minutes before serving (better if you can chill overnight).
